Coming from a country that not only invented cheese but is also is known for making the greatest cheese in existence, I have to respect what the Swiss do to improve their cheese: play music to it to make it better!
Since today I always have some Gouda next to me, when practicing. But as of now the Gouda seems to be indifferent to my covers

That the Gouda lost interest, can Brie pretty hard I imagine. I however think your covers are Grate and they seem to become only Cheddar with time!
