Why not create your own backing tracks? I use https://moises.ai to isolate individual tracks, mainly so I can hear the bass, then remove it for practice and eventually downloading the tracks onto my recording software for covers. You can use it to remove the vocals, change the song key, slow it down and speed it up.
Using Moises, you can generate backing tracks for any song you like, providing you can get the MP3, which is pretty easy.
GY!BE is another great example! A lot of utterly great post-rock/metal/hardcore being made right now.
