It’s one thing for a teacher to try and push a student to go outside of their comfort zone/skill level. It’s a great way to advance. It’s another thing to be completely unrealistic about it and not realize they’re pushing a bit too far.
I remember more than one time back in my piano days where my teacher put a piece of music in front of me and I like “you’re joking, right?”. However, she also used it as an opportunity to teach me how to break things down to their tiniest components and, even though it took much longer to learn than my previous assignment, I still learned it and the confidence boost was immeasurable.
It sounds to me that your teacher is trying to do that but maybe in the wrong way.
