Is this the right way to count this? I’m stuck…although I’ll be damned if I can count this out at speed vs just internalizing it

Yes. It could be notated better. The third beat would look like a dotted eighth and a sixteenth tied to the first sixteenth of the fourth beat.

The rhythm that @Mikich described would be no problem.
Visual patterns are how we read fast syncopations, so if you monkey with those, it’ll really mess with the head.
