Mapo Tofu is perfect for a cold winter’s day especially one with the Szechuan pepper corn the one that makes your tongue numb, have that with a steaming bowl of steamed rice. Oh good coma heaven.
Aww yeah man. Great example of a dish where tofu is just an awesome ingredient, not a “substitute” for anything.
All y’all’s talk of Hot and Sour soup has caused some soup mix to spontaneously appear in our kitchen. I swear this was not here yesterday. Coincidence? I think not 
Yum! They don’t sell that here. It’s tough though because the sourness can not be cooked with the soup or it turns bitter I wonder how they do it, separate seasoning?
Haven’t tried it yet, not sure. I’m not joking, first I saw this was today - apparently my wife bought it as a coincidence.
Yeah usually the vinegar and white pepper is added at the end when you turn off the heat. Some places like Din Tai Fung would let you add that at the table.
Din Tai Fung - man, now dim sum sounds good. There’s a few Din Tai Fung here, one close to my work; lunch would be doable. Hmm.
We used to do that weekly but now after the lockdown they went high end and the price pretty much doubled, I’m not sure if I’m in for a $200 check for the dumpling, it’s just bazaar how they restructured their company. I can make Sio long bao at home and taste just as good or better than the Mexican they have cooking. I’m all for good meal but this is just bad business.
They are running 10-12% food cost on dumplings and fried rice( pork chop) when restaurant standard is running about 25-28% food cost. The sad thing is they think it’s such a difficult dish(es) to cook, it’s not, a few trials and error anyone can make a killer soup dumpling at home and taste just as good. Lol.
I’ve never actually tried. I think most people just get stuff like Xiao Long Bao at the store or maybe even frozen, or on the way home from a chinese place (there’s a really convenient carry-out in Shinjuku station). It’s called shouronpou here, really popular.
How is this thread still alive? I grosely underestimated how strongley individuals are tied to their beliefs of a soy product. I need to either get busy living or get busy dying (or go practice, which I should be doing right now anyways
