That looks great. Drinking it flat before bottling?

Last mead I made I bottled and let it do the tertiary fermentation to carbonate like you do with beer.

I racked it into a second stage carboy today, I had half a gallon leftover, so I back sweetened with honey it and added homemade vanilla and cinnamon extract to flavor it. It was in the first stage for 7 weeks. I actually forgot to take a a hydrometer reading when I started it so I will have no idea of the exact alcohol content. I kept putting off second staging it because it bubbled in the airlock for so long. I’m going to guess about 18 to 20% based on previous batches. I’ll know more by tomorrow if I lose some stored memory locations tonight! I must say even young and green, this batch tastes pretty good!

A little bit of Odin’s Dogg Mead! I re racked a batch today to get it off the sediments. This is some that has a little sediment in it. It’s still green at 2 months old, but still quite good!

That, and the fact that I dig good vodka. Don’t know if this is good vodka, but I’m happy to test the hypothesis…

That’s in the London Underground. I don’t think that ad would fly in the U.S., but it’s very clever.
