8th note timing technique

So here’s my problem, I hope I can explain it well  I can play whole notes, 1/4 notes and 8th notes quite comfortably in equal timing, however, I am practicing some songs that do not need me to play all of the 8th notes (if that makes sense) and may be a mix of quarter and eighth notes. So maybe something like striking note 1, then on the ‘and’ between 2 and 3, then maybe a few more notes thereafter. I’m finding that when my brain is counting ‘1 and 2 and 3 and 4 and’ that by the time it computes the ‘and’ after 2 and my finger plucks the string, it’s actually coming in on the 3 and not on the ‘and’… does that make sense? Is there any practice exercises that can help with say playing a whole bar of eighth notes but maybe missing one or two out?? Hope I explained that well

Thanks Mike, this is genius… it’s almost like the video was made just for me  This is exactly what I need, and I’ve learnt what syncopation is. Thanks again.
