this seems to be the ongoing strategy from them lately, it seems to have started a few years ago. they seem to be streamlining their permanent lineup of instruments and supplementing them with the vault and the family reserve limited runs.

I don know, I like it. And even my kids do. We have it lightly boiled or steamed, and on the side we make a roux out of melted butter and breadcrumbs which we pour over the offending vegetable. Yum! Works on beans and peas as well.

One of the most popular dish I have on the menu at the school is the Mac’N’Cheese and Fettuccine Alfredo. I put cauliflower purée in the béchamel. I used to list the ingredients not I just leave them out of the description. Kids can’t tell I’m not about to reveal, lol.

In any case, cauliflower is excellent when processed down like that! You can also freeze it and then use it as a rice substitute if done right.

Cauliflower is my main source of carbs. Love it. With eggs, tuna, and avocado. You name it. The rice and the mashed are awesome and I tried another day the pizza dough. Pretty amazing and versatile.
