Same here! Try to make a loaf or two every weekend. I can only do it on weekends because of the 12 h fermentation time and the little extra attention it needs. But, really, apart from the time, it’s really easy. I bake mine in a pot - here’s the result:

I have to agree here. Some gluten free crusts are passable but I have yet to find a single vegan cheese that was not terrible.
I’ve tried “the good ones”
Good ones mean they don’t make you want to vomit when you put it in or near your mouth.
I’ve tried slices on an egg sandwich - they are so slippery everything shoots out of the pretend bun.
The shreds - acceptable, if you put s lot of other stuff around them - tried in quesadilla with a pretend tortilla and chicken, fine if you dip it in hot salsa, but at some point you just say “why?” Lol
I do have a recipe to try for “rustic artisan bread” using gluten removed flour that’s supposed to be terrific. I too used to make a lot of homemade bread @joergkutter - love the whole process. It can be used for pizza dough as well but again, why (cheese)?
There is a small bakery chain around here called By The Way of gluten free / vegan only things. I am certain they made a deal with satan because everything in it is the bomb. They sell out daily. It’s cost me a number of pounds since I discovered it. So sweets, check (hell the gluten free Oreos are even outstanding), but pizza, nope.
So the cheese - is this a lactose thing or something else? There’s lower lactose real cheeses.
I agree about vegan cheese. I’ve been a vegan before and I was never tempted even once by the offerings, after trying them. The more recent ones are better but still holds.
Then again, there’s always pizza marinara. No cheese, and delicious.
I feel with you, John… having to let go of these “pleasures” is no fun at all (heck, there is only so much fun left in our lives ). But, yes, the marinara/Napoli variant that @howard mentioned should give you some way to enjoy cheese-free pizza.
While the bread is great (especially when still a bit warm), the entire process is what is so rewarding here. The simplest of ingredients to start with and then you end up with such a delicious result (still simple in a way, but that really only adds to the satisfaction, I think).
Yeah Neapolitan-style pizza is generally light on cheese even when it has it. Great stuff too.
Something else.
I have eosinophilic esophagitis which is mainly caused by a food “intolerance” Vs allergy/anaphylactic shock thing. It builds up cells along the esophagus and makes it harder to swallow and can later lead to cancer. So they do a food elimination diet then if it clears up start giving you back things until they find the cause. For 7 months I was gluten/dairy/egg/soy & joy free. This was super hard. But… Cleared right up. So I got back soy and egg. Get checked again in a while if if swallowing becomes a thing.
The funny thing is I enjoy the gluten free very much. Never bloated full - ever. It’s just a PITA and a few things go missing but you do get over it. You really do feel better without it. I suppose I could cheat here and there but how often is ok etc would make me a little nuts, so easier just to abstain.
I have an old friend who used to say “if you have a penny and double it, you’re still poor”. Applies here. They’ve come a long way and are at least 100% better and still are horrible.
Yeah. Gotta agree. It’s unfortunate but even the ones close on flavor are way off on texture.

Recently I accidentally tried, more like gave in and tried the beyond burger and I was pleasantly surprised they are great. They are by no mean a meat patties substitute or taste like one but the taste was not bad and the texture was spot on. Bought a pack from Costco finished that them bought a case from restaurant depot. Lol.
I’ve always liked veggie burgers ever since the first ones. They are great as long as you don’t think of them as hamburger substitute.
Meat substitute sucks. If you can or won’t eat meat don’t eat something that you’d think look or taste like meat. If you are doing vegh then vegh. Asian are notorious for this with saitan products, they have beef, pork, chicken, fish, and now pork belly, what?
I much prefer the Impossible lineup… burgers, meatballs (no gluten) and breakfast sausage.
The meatballs (having no breadding in them) gave me meatballs back, yay!
The other stuff is just there to cut back on meat a bit and mix things up.
