Pronounce it correctly: cast ahrn.

My oven’s fuc… not working. Done in a cast ahrn pot with a cast ahrn lid on the stovetop.

Seared with the element set to “melting point of tungsten” then threw in the onions and mushrooms with some allspice, let it sweat, added the stock, turned it down to “merely hot” and let it stew for 27 minutes.

I then took the veggies and sauce and pressed it through a strainer to get a smooth gravy. The jus was added to gravy, ofkorz.

I remember you posted about Chasuke, I lived in Osaka for about 3 months, there’s a cart that I go to almost daily. I was 16 at the time and that was the most affordable meal so I can spend the rest on toys, lol.

The alternative that I sometimes do, is take the roast, and freeze it for about 45 minutes at -40C(-40F) and then slice it just under 1/4". The spice mix is the same. I then sear each individual piece by itself, and stew them together with the veggies, spices and stock. I do those longer, so that the beef just melts in the mouth
You don’t even need to chew. Oh. My.

Oh man stop it. Well actually keep going I’m at my restaurant about to have a feast. It’s one of our chef’s birthday so we are cooking up a storm. Lol. This is the appetizer course. King crab and prawns in chili garlic stir fries. And skewer squid belly.

We had dinner at a seafood place called “Crab Du Jour”. I think they’re an East coast chain.

The wife had salmon and I had the messy boil platter.

Thursday was National Pizza Pie Day so I did the pizza making thing!



It was too rainy to use the outdoor pizza oven so these are from my home oven.

Thanks!!! It’s a pretty standard electric oven actually! I have a thick pizza steel (9.5mm) in there and I blast it full temp (288C) for about 75 minutes. Load the pizza on the steel and let it cook about 6 minutes total. 3 minutes in normal mode and 3 minutes on broil mode to give the top nice color. :grinning:

Ah, OK; mine is probably not quite that thick… close though. But I certainly haven’t gone to 288 C yet - that’s what the oven does when it is cleaning itself :laughing:

I see - that is how you got those nice dark Neapolitan crusts :wink: Need to try that next time!!

Yep! Just be very eagle-eyed during those 3 minutes. Sometimes it doesn’t take the full 3 minutes. Eyes on the pies!
